Campfire Recipe and Meal Ideas: Trail Mix and Lemon Garlic Chicken

Unless you have an R.V with a full-fledged kitchen equipped with a complete selection of supplies, you may wonder how it is possible to create delicious food with limited tools and resources during a camping trip. When cooking at home, you have at your disposal a full set of pots, pans, utensils, and a cabinet full of seasonings. When you're in the wilderness you can't bring it all with you, but you have to eat, and you should eat healthy and well. The key to this sort of dining is simplicity, strong flavors, and planning ahead.

Snacks will be important if you are outside being physically active. Trail mix is a good medium through which you can consume all of the necessary macronutrients your body needs for physical activity. Combine: salted almonds, peanuts, and walnuts; dried fruit like apricots, raisins, and mango; rice and/or wheat cereal, and pretzels. The nuts will provide healthy fats which, alongside the carbohydrates from the cereal and fruit, will power your adventures through the woods. Trail mix is a fun and easy snack that allows you to be creative and only takes a few minutes to make.

But, trail mix won't satisfy you for the entire day or weekend. After hours of hiking or playing, you will want some more substantial food, lest the family starts getting cranky. You will need to make sure that either you have brought a grill, or that one is provided by the campsite you have chosen. Make sure that when you prepare your food in advance, you make a little extra just in case you drop something outside in the dirt or leaves. Bring a cooler with plenty of ice and water.

Lemon Garlic Chicken for the Grill

You'll need:
 
1 or 2 large ziplock bags
4 chicken breasts
1 lemon
3 cloves of garlic
1/3 cup olive oil
salt and pepper to taste

How to prepare it:

Filet the chicken breast so that you have nice, thin pieces. Put them in the plastic bags and cover with olive oil. Quarter the lemon and squeeze over chicken. Throw the peels into the bag as well. Smash the Garlic and throw them into the bag. Add salt and pepper, seal the bag, and massage the seasonings into the chicken. Put the chicken in your cooler and you're ready to cook. This recipe is fast, simple and delicious. Serve with some grilled potatoes and make sure to drink plenty of water.
